The Best Chilled Raspberry Soup Recipe

It’s light and fresh, but the flavors are complex. It’s crisp and tangy, but the texture is creamy. I was really just messing around, but I was so happy with how this recipe turned out!

Chilled Raspberry Soup Inspiration

So there I was – out in my front yard, taking pictures for a tablescape post. The table was pretty and I really liked it, but it felt like something was missing.

I thought about it for a while, and then got distracted by thinking about what a beautiful day it was, and how much I’d love some chilled soup. (This happens to me all the time – you’d think I lived for food or something!)

You can see where this is going, right? Eventually my two thought processes came together, and I ran into the house to find out how to make chilled raspberry soup.

Making Up The Recipe

I went online and looked up several chilled soup recipes, and just took ideas I liked from each one. The photo below is where I started.

I love all the ingredients separately, so I thought I’d try mixing them all together.

I ended up not using the vanilla or the wine. However, I did end up adding a few things. And though they were beautiful (and tasty,) I didn’t end up putting any lilacs in either.

On The Table

But when it was done, I was so thrilled with the beautiful color! Isn’t it perfect on the table? I decided to put the wine in glasses instead of in the chilled raspberry soup. Which turned out to be a delicious decision!

It was as perfect a first course as I wanted. And we got to sit out in the beautiful sunshine and enjoy it! So without further ado, here’s the recipe!

Chilled Raspberry Soup

Ingredients:

  • 1 medium shallot, sauted in olive oil
  • 1 1/2 Cup raspberries, frozen (or fresh if you want, just add a little crushed ice.)
  • 1/2 Cup fresh pineapple (or frozen, just take away a little crushed ice.)
  • 1 C almond milk
  • Salt & pepper to taste
  • A few fresh basil leaves to taste

Steps:

  • Put all ingredients into a food processor and process until almost smooth, (or your desired texture.) Easy, huh?
  • Pour into bowls

Garnish

Ingredients:

  • Raspberries (fresh or frozen)
  • Basil leaves
  • Goat cheese (crumbled)

Steps:

  • Sprinkle goat cheese on top of soup
  • Put on a raspberry on two
  • Add the basil leaves
  • Eat!

It doesn’t have to be raspberry. You can substitute just about any of the ingredients, but do keep the sauted shallots, basil, and some kind of cheese. I think that’s what makes it so delicious!

Barbara, that’s exactly what I do when trying out a new recipe – look at about a dozen online, see what the common ingredients are, and then add the other ingredients I like and take away the ones I don’t. It generally works pretty well for me, and here, I’d have to say it worked very well for you here. Your soup looks fantastic and the color is gorgeous! I agree that the wine is better in the glasses and cheese is just never wrong lol. It sounds like you really enjoyed and the day looks perfect too! Happy Monday my friend!
